Rice Flour
Rice flour is 100% pure flour obtained from cleaned, polished rice, free from foreign matter, other cereals and additives. It is naturally gluten-free (gluten below 20 ppm) and used in the bakery and confectionery industries, infant food, gluten-free products and ready meals.
Technical aspects
The product is made by milling selected rice or broken rice kernels. The raw material undergoes cleaning, including air-jet whitening, sorting and optical selection, before being milled and dried. The flour is white, with a typical rice smell and taste and no aftertaste, and a density of 0.50-0.70 kg/l. It is available in three particle sizes: flour (< 150 µm), semolina (125-250 µm) and semola (200-400 µm), with a ± 10% tolerance.
Gluten content does not exceed 20 ppm, which allows the finished product to be labelled gluten-free under Regulation (EU) No 828/2014. Due to cross-contamination from the field, the product may contain soya. It is non-GMO and non-irradiated, and pesticides and contaminants comply with Regulations (EC) No 396/2005 and No 1881/2006. The plant holds IFS, Kosher and Halal certification.

Storage period
Store in a cool, dry, odour-free place below 17 °C and at humidity up to 65%. Rice flour is prone to storage pests, so rapid stock rotation is recommended.
Packaging
Foodcom S.A. supplies rice flour in 25 kg bags, on pallets or in bulk.
Application
In the food industry, rice flour is the base of gluten-free bread, cakes, biscuits, pasta and mixes, a component of coatings and batters, a thickener for sauces and soups, and a raw material for rice cakes, extruded snacks and infant cereals. Its neutral taste and white colour do not affect the sensory profile of the end product, and the fine grade (< 150 µm) gives a smooth dough texture. Semolina and semola suit products that need a coarser, crunchier structure.
Beyond mainstream food, it is used in dietetic products, foods for special medical purposes and in the feed industry as an energy ingredient.
