Maltitol Powder
Maltitol is a polyol (sugar alcohol) obtained by hydrogenation, refining and crystallisation of maltose syrup. It is a sweetener authorised in the EU as food additive E965(i) under Regulation (EC) No 1333/2008. It is used in sugar-free confectionery, chocolate and bakery products and in pharmaceutical products.
Technical aspects
The product is a white or off-white crystalline powder with no odour. Maltitol content on a dry basis is min. 98.0%, water content max 1.0% and reducing sugars (as glucose) max 0.1%, which limits Maillard reactions during heat processing.
Specific rotation is in the 105.5-108.5° range, conductivity does not exceed 20 µS/cm and residue on ignition 0.1%. Maltitol has about 90% of the sweetness of sucrose at an energy value of 2.4 kcal/g under Regulation (EU) No 1169/2011. Sulphate, chloride and heavy metal limits are given in the table.

Application
In the food industry, maltitol replaces sucrose in sugar-free chocolate and chocolate products, hard candies, chewing gum, ice cream, biscuits and bakery goods while keeping similar bulk and texture. Its low reducing sugar content and lower hygroscopicity than other polyols make it easier to use in chocolate and panned confectionery.
Beyond mainstream food, it is used in dietary supplements and pharmaceutical products (tablets, syrups) as a sweetener and bulking agent. Products containing more than 10% polyols must carry the laxative-effect statement required by Annex III of Regulation (EU) No 1169/2011.
