Cagliata is distinguished by its uniform, compact texture and white to light yellow colour. It has a delicate, slightly sour taste, without any foreign flavours or odours. The rind is smooth, with slight imprints from the mould, bag or small holes near the rind.

Storage period
Cagliata should be stored in cool, clean rooms at a temperature between 0°C and +6°C, free from foreign odours. Transport at a maximum temperature of +6°C.
