Technical aspects
Lactose-free instant whole milk powder is made by spray drying pasteurized cow’s milk of Finnish origin. The process involves partial removal of lactose through filtration, followed by its enzymatic hydrolysis to glucose and galactose. The powder is yellowish in color, free-flowing, and may contain soft, easily breakable lumps. It is characterized by a clean, pleasant and slightly sweet taste and a typical milky odor. Thanks to lecithinization, it dissolves quickly, and additional enrichment with vitamin D increases its nutritional value.
