Sorbitol – what is it?

Sorbitol is an organic chemical compound belonging to the sugar alcohol group. It is obtained by the reduction of glucose, converting an aldehyde group to a hydroxyl group. Sorbitol is most commonly extracted from Potato Starch, but it is also found in nature – it can be found in fruits such as plums, including dried, pears, peaches, cherries and apricots.

Properties of Sorbitol 

Sorbitol occurs in the form of an odorless white powder or a sweet-tasting granule. Sometimes it is also found in liquid form. Most uses of Sorbitol are related to its sweet taste. However, it is not sweeter than sugar; its sweetness is 50-60% that of Sucrose. It also has a cooling effect in the mouth after consumption that can mask other unpleasant tastes, such as saccharin.

In addition, Sorbitol is very soluble in water and only slightly soluble in ethanol. It is stable at high temperatures and chemically inert.

Sorbitol affects not only the taste but also the texture of the product. It has filling, stabilizing and moisturizing properties. Due to its hygroscopic properties, it serves as a moisture stabilizer.

Sorbitol applications

As mentioned earlier, Sorbitol has a variety of applications in the food industry – as a sweetener and texturizer. Here are the most important applications:

    1. In the food industry – Sorbitol is added to products to give them the right sweetness. Since it prevents moisture loss, it is also added to products that become hard when stored too long
    2. In the cosmetics industry – in the production of cosmetics, Sorbitol is a humectant and thickener. It affects the complexion and hair, as well as the texture of the product.
    3. In the pharmaceutical and medical industry – Sorbitol acts as a laxative and is therefore included in orally taken medications or enemas. It is also used as a carrier in the manufacture of medicines, especially tablets and capsules. As a component of syrups, in turn, it prevents the crystallization of the capsules.

Sorbitol as E420 is an ingredient in many foods. Because it is low in calories – 30-35% less than sugar – it is an ingredient in many low-calorie products such as protein bars, diet drinks, and ice cream. It is also included in the composition of sugar-free chewing gum. Sorbitol has a low glycemic index and is therefore also found in products for diabetics, such as chocolate, jams, jellies and ice cream.

Sorbitol is often used in the manufacture of confectionery. It prevents moisture loss and is therefore added to cakes or chocolates that become hard and dry out during storage.

Sorbitol in cosmetics

Another popular use of Sorbitol is in cosmetics. In them, Sorbitol is a humectant and emollient. It binds water, which means it has a moisturizing effect, which is why it is included in many creams, shampoos or lotions. Sorbitol not only moisturizes, but also smoothes and improves the skin.

Because of its sweet taste, Sorbitol is also added to oral hygiene products – toothpaste or mouthwash.
