Technical aspects
Alkalised cocoa powder 20-22% is a product with a higher fat content, varying between 20-22%, which gives it a rich taste and smooth texture. Thanks to the alkalisation process, the cocoa has a neutral pH (7-8), which ensures better stability of the product and increases its solubility in liquids such as milk or fats. Alkalised cocoa is characterised by a darker colour and a milder, less bitter taste compared to natural cocoa. The alkalisation process also results in lower caffeine content (approximately 78 mg per 100 g) and lower antioxidant and amino acid levels compared to non-alkalised cocoa.
Storage period
The product has a shelf life of 24 months when stored in a dry and cool place.
Packaging
Cocoa is packaged in 25 kg bags and big bags, with a minimum order of 1 metric tonne.
