Whey protein isolate is obtained by concentration and purification of Whey Protein Concentrate (WPC) to reduce the content of fat and carbohydrate in whey. The process can be conducted with the use of membrane separation or ion exchange. WPI is considered a product of the highest purity and concentration of protein. 

 

WPI consists of at least 85% of protein and little lactose (less than 1%) - which can be a huge advantage for people with lactose intolerance. Moreover, the product has low residual sodium content and low lipid rates. Despite the purification process, WPI still retains high levels of calcium and amino acids. 

 

Applications

Whey Protein Isolate is a commonly used component of sport nutrition products including beverages, snack bars, and clear sports drinks. It is also used in dietary goods due to very low levels of fat. Furthermore, its high amino acid content makes it a perfect ingredient for baby foods. Other applications for Whey Protein Isolate include the general production of desserts, creams, yogurts, puddings, soups, dry mixes, sauces, confectionery products, ice creams, meats, and sausages.

 

 

Technical aspects 

Whey Protein Isolate is characterized by a neutral taste, moisture retention, and fast digestion. It is also highly soluble and dispersible. It is a source of high-quality and low-denaturation proteins. WPI enables the fortification of protein content and low levels of fat. 

 

There are many other useful properties of WPI which among many others are:

  • Whipping and foaming ability which is beneficial in the production of desserts. 
  • Gelling capacity - important in manufacturing of various soups, sauces and confectionary 
  • Emulsifying capacity - very useful in production of ice creams, sausages and also soups.

 

Shelf life

The average shelf life of Whey Protein Concentrate (WPI) is 18 months. The product should be stored in a dry, clean warehouse with a max. temperature of 25°C and relative humidity max. 75%. 

 

Packaging 

Whey Protein Concentrate (WPI) is available in packs of 15/25 kg.
