Cagliata 48% FDM

Cagliata 48% is produced from pasteurized milk that is subject to enzymatic coagulation. Delicate with a slightly bitter flavor. It is characterized by its soft, elastic flesh that is white to pale yellow. It is a soft cheese whose, greatest quality is its ease of melting. It is mainly used for pizza but has also found use as an intermediate product for the production of cheeses like Mozzarella.

Cagliata is usually available in blocks with each weighing about 9 or 15 kg.

Fat content:  48%.

Cagliata has shelf life of about 4 months.
