Fresh cheese: Mozzarella cheese 40%, Cagliata cheese 45% and 48% 

Mozzarella is a fresh, rennet traditionally southern Italian cheese made from pasteurized cow’s milk with a fat content of min 40%. Mozzarella has many functional properties ideal for industrial applications such as melting, stretching, and shredding. These features make Mozzarella a perfectly suitable ingredient of pizza, salads, ready-cooked dishes, lasagne, pasta, soups, and sauces. Foodcom S.A. supplies Mozzarella in 3 kg blocks or 15kg euroblocks.

 

Cagliata 45% and 48% are fresh cheeses produced from cow’s milk. The production of Cagliata is based on the coagulation of pasteurized milk with microbial rennet. Cagliata cheese is characterized by great melting properties and flavor stability finding its application in the production of pizzas, casseroles, and pasta filata-type cheese. It can also be used as a semi-finished product in the manufacture of Mozzarella cheese, Scamorza-type cheese, and Provolone cheese. Foodcom S.A. supplies Cagliata in 15kg euroblocks.

 

 

Semi hard type cheese: Gouda 45% and 48%; Edam 45% and 30%; Maasdam; Tilsiter 

Gouda 45% and 48% are ripened semi hard, Dutch yellow cheeses made from cow’s milk. The process of Gouda cheese manufacture involves coagulation with rennet, whey and lactose removal, cooking, brining, and molding. The ripening process takes between 4 weeks to over a year depending on the expected final product. Gouda is mainly destined for direct consumption as snacks and as an ingredient of sandwiches, salads, toasts, burgers, and tortillas. It also finds many applications in the confectionery and bakery segment. Gouda cheese is available in 3kg blocks or cubes wrapped in foil with red or another color or 15kg euroblocks.

 

Edam 30% and 45% are types of semi-hard cheese that originates in the town of Edam in North Holland. It is produced from partially skimmed pasteurized cow’s milk. The cheese is characterized by a slightly salted and hazelnut taste which grows stronger with maturing. Edam is found in cheese products where high protein and low-fat content is desired. It is also suitable for direct consumption or as an ingredient in pizza toppings. Edam cheese 30% and 40% are available in 3kg blocks or 15kg euroblocks.

 

Maasdam is a Swiss-style Dutch rennet cheese characterized by a faster maturation process than other Dutch cheeses. It has a delicate nutty, sweet, and slightly spice taste. It can be used as a less expensive substitute for Swiss Emmental but contains more moisture and is thus more tender. Maasdam is suitable for direct consumption and as an ingredient in bakery goods, pre-made dishes, sauces, dips, pizza toppings, and soups. It has a soft, creamy texture and is especially known for its excellent melting properties. Foodcom S.A. supplies high-quality Maasdam in 13kg blocks.

 

Tilsiter is a semi-hard Swiss-Dutch rennet cheese made from raw or pasteurized cow’s milk. Depending on the method of aging and the techniques used in curd cheese processing, we can extract soft and hard cheeses. Each group is appropriately divided into special types - from those with a sweet and delicate flavor to exquisite cheeses with a pinch of spiciness. Tilsiter cheese is destined for direct consumption or as an ingredient of cheese-based foodstuffs in the confectionery and bakery industry. Foodcom S.A. supplies Tilsit packed in blocks of 3, 9 or 15 kg.

 

 

Hard type cheese: Cheddar 

Cheddar cheese is considered a somewhat hard, matured natural cheese. This is one of the most popular types of cheese in the world, especially in the UK and in the US. The ageing process takes between 6 and 24 months and can be distinguished from the different types of Young curd, Mature, Mild, Vintage forms. Cheddar has a variety of industrial applications: it can be shredded, grated, or melted, which can be useful in the bakery and confectionery industry. Typically, Cheddar has a yellow-orange/ivory color but Foodcom S.A. delivers also a white type - without colorants or red - a colored one. Cheddar is available packed in blocks of 2,5kg up to 20 kg. A variety of packaging sizes is also available on request.

 

 

Others: Cheese analogue / Imitation cheese / Cheese alternatives

Cheese analogue (also known as imitation cheese or cheese alternative) is a cheese product made by partially or fully replacing milk fat with vegetable fat. Other production standards are the same as in regular cheeses production. Cheese analogues are widely chosen for their cost-effectiveness and the simplicity of their manufacture. The product is most commonly used as a replacement for pizza cheese and topping because of its properties that resemble mozzarella cheese. Cheese analogues are characterized by a high content of fat and protein and low content of lactose. Foodcom S.A. supplies cheese analogue in 3kg blocks or 15kg euroblocks. Foodcom S.A. can also deliver cheese analogue in 1 kg blocks or shredded and packed in 1 or 2 kg bags.
